              Basic cooking and knife techniques will be taught as well as kitchen safety and Mis-en-Place.

      There will be sampling in class, but please bring take-home containers for leftovers. Don't forget your apron!  


 

The rugged 49ers ate big and hearty to keep up their strength as they mined their claims hidden deep in the California hills! We’ll explore the common culinary fare of this historical era and make some of the gold miners’ dishes. Of interest, many of the recipes contained large amounts of hard alcohol - ours do not, but will still be delicious! We’ll learn how to make two of the more commonly eaten main dishes: Gold Rush Chili and Corned Beef Mulligan and also Griddle Cookies, sturdy little cake-like cookies that are served dipped in chocolate or honey.
